It wasn't bitter or tough, and it didn't cause gas as some raw vegetables will do. She highly recommends organic, and I would have to agree. You don't want the pesticides when eating raw (actually when you're eating anything fresh). So, get those collard leaves from Whole Foods and not Produce Junction.
