Slow Cooker Pizza

Last week I was on a crock pot roll.  One of the dishes I made was Slow Cooker Cheese Pizza.  It’s a recipe from Phyllis Pellman Good’s book FIX-IT and FORGET-IT LIGHTLY : Healthy, Low-Fat Recipes for Your Slow Cooker. Here’s how to make it.  You’ll need:

  • 1 Tbsp olive oil
  • 1.5 lbs. 99% fat free ground turkey
  • 1/4 cup onions, chopped
  • 28 oz. jar fat free, low sodium spaghetti sauce
  • 4.5 oz. can sliced mushrooms, drained
  • 1-1.5 tsp. Italian seasoning, to taste
  • 12 oz. package of wide egg noodles, slightly undercooked
  • 2 cups fat-free, shredded mozzarella cheese
  • 2 cups low-fat, low sodium, shredded cheddar cheese

 

 

 

 

  1. Cook ground turkey and onions in large skillet in olive oil until no longer pink.  Drain.
  2. Stir in spaghetti sauce, mushrooms, and Italian seasoning.
  3. Spray slow cooker with non-fat cooking spray.  Spread one-quarter of meat sauce in pot.
  4. Cover with one-third of noodles.  Top with one-third of cheeses.
  5. Repeat layers twice.
  6. Cover and cook on low for 3 hours.  Do not overcook.

It tastes great and best of all, it was EASY.  It reminds me of lasagna without all the extra stuff.  I will add that I did not cook my noodles first.  I added them in dry with the thought that the noodles will cook in the sauce after 3 hours.  Well, they did and I didn’t have a problem.  I’m sure there’s some super cooking science answer as to why the noodles needed to be cooked first.  The next time I made the recipe, I will cook the noodles to find out.

    That recipe sounds good enough for me to eat. I may try it using tofu instead of turkey. I’m going meatless next month.

      It was a good simple meal. It seems a few folks are going meatless for 30 days. You may also want to try a protein “meat” substitute.
