Zucchini Vegetable Pot

Tonight, I made another super easy crockpot meal, and it is delicious!  The best part?  It’s only 1 point!  This one is loaded with veggies, which we all know, is a good deal.  This is another recipe from FIX-IT and FORGET-IT LIGHTLY : Healthy, Low-Fat Recipes for Your Slow Cooker. I did make a few changes and I’ll list them below.

Ingredients:

  • 1/2 lb ground turkey
  • 2 cups zucchini, diced
  • 2 ribs celery, chopped
  • 1/4 cup green bell peppers, chopped
  • 1 large onion, chopped
  • 2 large tomatoes, chopped
  • 1/4 cup rice, uncooked
  • 3/4 tsp. salt
  • 1/4 garlic salt
  • 1/8 tsp. nutmeg
  • 1/4 tsp. black pepper
  • 1 tsp. Worceshire sauce

Putting it together:

  1. Brown turkey in nonstick skillet.
  2. Place vegetables in slow cooker.
  3. Top with rice and ground turkey.
  4. Sprinkle seasoning over top.
  5. Cover.  Cook on high for 3-4 hours.

My changes

As I said, I made a few alterations. 

  1. I didn’t have Worcestershire sauce on hand, so I used a low sodium soy sauce for flavor.
  2. I used brown rice and it didn’t cook after 3 hours.  The next time, I would use cooked rice or add the uncooked rice after the first or second layer of veggies.  This way, when the juices are bubbling, it will cook the rice.  Last night, I stirred and let it cook for another hour.
